- 9 oz (260g) mushrooms
- 1 tsp wine
- 1/8 tsp sugar
- 1/8 tsp salt
- 2 oz (50g) onion
- 7.4 oz (210g) zucchini
- 4 cloves of garlic, minced
- 12 oz (340g) chicken
- 1 1/2 tsp soy sauce
- 1 1/2 tsp oyster sauce
- 1/2 tsp dark soy sauce
- 1 tsp sugar
- 1 tsp baking soda
- 1/8 tsp white pepper powder
- 4 tsp corn starch
- 6 tsp water
- 4 tsp oil
- 1 tbsp wine
- 1 tsp dark soy sauce
- 1 1/2 tsp oyster sauce
- 1/2 tsp sugar
- 1/3 cup water
- 1/8 tsp black pepper

Directions:
- Prep the vegetables: Slice the mushrooms, onion, and zucchini. Mince the garlic.
- Prep the chicken: Cut the chicken into bite-sized pieces. In a bowl, mix the chicken with soy sauce, oyster sauce, dark soy sauce, sugar, baking soda, white pepper powder, corn starch, and water. Marinate for a few minutes.
- Cooking the stir fry: Heat oil in a wok over medium-high heat. Stir fry the mushrooms with wine, sugar, and salt until cooked; remove from pan. In the same pan, stir fry the garlic, onion, zucchini with sugar, and salt until tender-crisp; remove and set aside.
- Add marinated chicken to the pan; stir fry until cooked through. Return the mushrooms and vegetables to the pan, add wine, dark soy sauce, oyster sauce, sugar, and water. Cook for 2-3 minutes. Season with black pepper.
