Ingredients
- 300g (10.5 oz) pasta
- 200g (7 oz) streaky bacon, chopped
- 2 medium courgettes (zucchini), sliced
- 2 cloves garlic, minced
- 200ml (7 fl oz) double cream
- 100g (3.5 oz) grated Parmesan cheese
- Salt and pepper, to taste
- Fresh basil or parsley, to garnish
Instructions
- Cook the pasta according to package instructions, then drain and set aside.
- In a large frying pan, cook the bacon over medium heat until crispy, about 5-6 minutes. Remove from the pan and set aside.
- In the same pan, add the garlic and sauté for 1-2 minutes, until fragrant.
- Add the courgettes to the pan and cook for about 5 minutes, stirring occasionally, until tender.
- Lower the heat and pour in the double cream. Stir until the cream has heated through.
- Add the grated Parmesan cheese, and stir until the sauce becomes smooth and creamy.
- Season with salt and pepper to taste.
- Toss the cooked pasta into the creamy courgette and bacon sauce. Stir well to coat.
- Garnish with fresh basil or parsley, and serve immediately.
