Ingredients

  • 1 lb fresh lobster meat, chopped
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 1/4 cup Parmesan cheese, grated
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 12 oz fettuccine pasta
  • 1 tablespoon butter

Instructions

  1. Cook fettuccine pasta according to package instructions, drain, and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add lobster meat and sauté until cooked through, about 3-4 minutes. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 1 minute until fragrant. Add cherry tomatoes and cook for 3-4 minutes until softened.
  4. Pour in the white wine and chicken broth, letting it simmer for 2-3 minutes.
  5. Stir in the heavy cream, Parmesan cheese, and fresh basil. Simmer for 3-5 minutes until the sauce thickens.
  6. Add the lobster meat back into the skillet and toss to coat in the sauce.
  7. Add the cooked fettuccine to the skillet and toss to combine. Stir in butter and season with salt and pepper to taste.
  8. Garnish with parsley and additional Parmesan before serving.
