Ingredients
- 1 lb fresh lobster meat, chopped
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1/2 cup white wine
- 1/2 cup chicken broth
- 1/4 cup Parmesan cheese, grated
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 12 oz fettuccine pasta
- 1 tablespoon butter
Instructions
- Cook fettuccine pasta according to package instructions, drain, and set aside.
- Heat olive oil in a large skillet over medium heat. Add lobster meat and sauté until cooked through, about 3-4 minutes. Remove and set aside.
- In the same skillet, add garlic and sauté for 1 minute until fragrant. Add cherry tomatoes and cook for 3-4 minutes until softened.
- Pour in the white wine and chicken broth, letting it simmer for 2-3 minutes.
- Stir in the heavy cream, Parmesan cheese, and fresh basil. Simmer for 3-5 minutes until the sauce thickens.
- Add the lobster meat back into the skillet and toss to coat in the sauce.
- Add the cooked fettuccine to the skillet and toss to combine. Stir in butter and season with salt and pepper to taste.
- Garnish with parsley and additional Parmesan before serving.
