Ingredients

  • 1 pound shrimp, shell-on
  • 4 cups water
  • 1 tablespoon salt
  • 1 teaspoon sugar
  • 4 sprigs fresh dill
  • 2 tablespoons olive oil
  • 1 tablespoon white vinegar
  • 1 tablespoon fresh dill, minced
  • Salt and pepper, to taste
  • Fresh dill sprigs, for garnish

Instructions

  1. In a large pot, bring water to a boil over high heat. Add salt, sugar, and dill sprigs. Stir until sugar dissolves.
  2. Add the shrimp to the boiling water. Cook for 3–4 minutes, or until the shrimp shells turn pink and the meat is no longer translucent.
  3. Drain the shrimp in a colander and discard the dill sprigs. Chill the shrimp in the refrigerator for about 30 minutes.
  4. Once cooled, peel and devein the shrimp, discarding the shells.
  5. In a bowl, whisk together olive oil, white vinegar, minced dill, salt, and pepper. Toss the shrimp with the dressing to coat evenly.
  6. Cover and chill the shrimp mixture overnight for best flavor development.
  7. Serve chilled with fresh dill sprigs as garnish.
