- 1 pound shrimp, shell-on
- 4 cups water
- 1 tablespoon salt
- 1 teaspoon sugar
- 4 sprigs fresh dill
- 2 tablespoons olive oil
- 1 tablespoon white vinegar
- 1 tablespoon fresh dill, minced
- Salt and pepper, to taste
- Fresh dill sprigs, for garnish
Instructions
- In a large pot, bring water to a boil over high heat. Add salt, sugar, and dill sprigs. Stir until sugar dissolves.
- Add the shrimp to the boiling water. Cook for 3–4 minutes, or until the shrimp shells turn pink and the meat is no longer translucent.
- Drain the shrimp in a colander and discard the dill sprigs. Chill the shrimp in the refrigerator for about 30 minutes.
- Once cooled, peel and devein the shrimp, discarding the shells.
- In a bowl, whisk together olive oil, white vinegar, minced dill, salt, and pepper. Toss the shrimp with the dressing to coat evenly.
- Cover and chill the shrimp mixture overnight for best flavor development.
- Serve chilled with fresh dill sprigs as garnish.
