  • 2 pounds Yukon Gold potatoes
  • 2 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cut potatoes into chunks. Boil in salted water for 15-20 minutes or until tender.
  3. Drain potatoes and return them to the pot. Mash with butter, heavy cream, garlic powder, salt, and pepper until smooth.
  4. Stir in the egg and Parmesan cheese until fully incorporated.
  5. Transfer mashed potatoes to a piping bag with a large star tip.
  6. Pipe small rosettes of mashed potatoes onto a baking sheet.
  7. Bake for 15-20 minutes or until golden brown and crispy.
  8. Garnish with fresh parsley and serve hot.
