- 2 pounds Yukon Gold potatoes
- 2 tablespoons unsalted butter
- 1/2 cup heavy cream
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 large egg
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Peel and cut potatoes into chunks. Boil in salted water for 15-20 minutes or until tender.
