Ingredients:

  • 2 cups cooked Jasmine rice (1 cup rice, 1 cup water, 1 tsp oil)
  • 6.3 oz (180 g) shrimp
  • 1/2 tsp rice wine
  • 1/6 tsp salt
  • 1/8 tsp sugar
  • 1/16 tsp white pepper powder
  • 1/2 tsp corn starch
  • 1/2 tsp oil
  • 2 cloves garlic, minced
  • 3.5 oz (100 g) bean sprout
  • 0.7 oz (20 g) carrot, julienned
  • 1/2 cup frozen green peas
  • 1/4 tsp dark soy sauce
  • 2 large eggs
  • 1/4 tsp salt
  • 1 tsp dark soy sauce
  • 2 stalks green onion, chopped
  • 1/8 tsp black pepper powder

Directions:

  1. Cook rice with 1 cup water and 1 tsp oil. Let it cool.
  2. Marinate shrimp with rice wine, salt, sugar, white pepper powder, corn starch, and oil for 15 minutes.
  3. Heat a pan over medium heat, add oil, and pan-fry the shrimp until they turn pink. Remove and set aside.
  4. In the same pan, add a bit more oil and sauté garlic, bean sprout, and carrot for 2 minutes.
  5. Push the veggies to one side of the pan, add beaten eggs to the other side, and scramble them.
  6. Add the cooked rice, peas, dark soy sauce, salt, and black pepper. Stir-fry everything together for 3-4 minutes.
  7. Add the cooked shrimp and green onions, stir-fry for another 2 minutes.
