Ingredients:
- 1 kilogram chicken with bones
- 2 tbsp soy sauce
- 1 tbsp calamansi extract or lemon juice
- 2 tbsp oyster sauce
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp chicken powder or magic sarap
- 1 tbsp minced ginger
- 2 tbsp cornstarch (plus extra for coating)
- Half of a chicken cube seasoning
- 4 tbsp hot water
- 5 cloves garlic, minced
- 1 large onion, sliced
Directions:
- In a bowl, combine chicken with soy sauce, calamansi extract or lemon juice, oyster sauce, sugar, salt, black pepper, chicken powder, and minced ginger. Marinate for at least 30 minutes.
- Dissolve half a chicken cube in 4 tbsp of hot water. Set aside.
- Coat marinated chicken pieces in cornstarch.
- Heat oil in a pan and fry chicken until golden brown. Remove and set aside.
- In the same pan, sauté garlic and onion until aromatic.
- Return the chicken to the pan and add the dissolved chicken cube mixture.
- Cook until the sauce thickens and evenly coats the chicken.
