  • 1/2 cup unsalted butter
  • 2 tablespoons heavy cream
  • 2 tablespoons custard powder (or instant vanilla pudding powder)
  • 2 cups powdered sugar

Top Layer

  • 4 ounces semisweet chocolate
  • 2 tablespoons unsalted butter

Instructions

  1. Bottom Layer: Melt the butter, sugar, and cocoa powder in a double boiler or heatproof bowl set over simmering water. Gradually whisk in the beaten egg until the mixture thickens slightly. Remove from heat and stir in the graham cracker crumbs, shredded coconut, and almonds. Press this mixture firmly into the bottom of a greased 8×8-inch pan.
  2. Middle Layer: Beat the butter, cream, and custard powder until smooth. Gradually add the powdered sugar and beat until light and fluffy. Spread evenly over the bottom layer. Chill in the refrigerator for about 30 minutes or until set.
  3. Top Layer: Melt the semisweet chocolate and butter together, either in a microwave-safe bowl or over a double boiler. Spread evenly over the chilled middle layer. Allow the chocolate to set before cutting into squares.
