Ingredients:

  • 1 cauliflower, cut into florets
  • 1 teaspoon salt
  • 2 onions, finely chopped
  • 1 carrot, peeled and diced
  • 1 cup rice, rinsed
  • 2 cups water
  • 2 bell peppers, sliced
  • 2 medium tomatoes, diced
  • 2-3 cloves of garlic, minced
  • 100g marinara sauce
  • 2 teaspoons sugar
  • Olive oil for cooking
  • Salt and black pepper to taste

Directions:

  1. Boil cauliflower florets with 1 teaspoon salt for 10-12 minutes until tender but firm.
  2. In a separate pot, cook the carrot for about 10 minutes, then drain.
  3. Heat olive oil in a saucepan, add onions, and cook until translucent.
  4. Add bell peppers and cook for another 5-7 minutes.
  5. Mix in garlic and tomatoes, then add the rinsed rice, water, salt, and black pepper. Cover and cook on medium heat for 25 minutes.
  6. Stir in marinara sauce and sugar, cover, and let simmer for 15 more minutes until the sauce thickens.
  7. Combine the cooked vegetables and rice with the cauliflower and adjust seasoning before serving.
