Ingredients
- 6 bell peppers (any color)
- 1 onion, diced
- 1 lb lean ground beef (93/7 blend recommended)
- 14.5 oz can diced tomatoes
- 18 oz can black beans, drained and rinsed
- 15 oz can corn, drained and rinsed
- 2 cups cooked brown rice
- 1 1/2 cups shredded cheddar jack cheese
- 1 taco seasoning packet
- 2 tsp garlic powder
- 1 tsp chili powder
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Wash the bell peppers, cut them in half lengthwise, and remove seeds and membranes. Place them cut side up in a baking dish and drizzle lightly with olive oil.
- Bake the peppers in the oven for 5 minutes to soften slightly.
- In a large skillet, heat olive oil over medium heat. Add diced onion, garlic powder, chili powder, salt, and pepper. Sauté until the onion is soft and fragrant.
- Add the ground beef to the skillet. Cook thoroughly, breaking up the meat as it browns.
- Mix in the diced tomatoes, black beans, corn, cooked brown rice, and taco seasoning. Stir well to combine. Taste and adjust seasoning with salt and pepper if necessary.
- Fill each pepper half generously with the ground beef mixture. Overfill slightly for a hearty portion.
- Cover the baking dish with foil and bake for 10 minutes.
- Remove the foil, sprinkle shredded cheddar jack cheese over each stuffed pepper, and return to the oven. Bake uncovered for 15 minutes or until the cheese is melted and bubbly.
