  • 6 bell peppers (any color)
  • 1 onion, diced
  • 1 lb lean ground beef (93/7 blend recommended)
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans, drained and rinsed
  • 15 oz can corn, drained and rinsed
  • 2 cups cooked brown rice
  • 1 1/2 cups shredded cheddar jack cheese
  • 1 taco seasoning packet
  • 2 tsp garlic powder
  • 1 tsp chili powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash the bell peppers, cut them in half lengthwise, and remove seeds and membranes. Place them cut side up in a baking dish and drizzle lightly with olive oil.
  3. Bake the peppers in the oven for 5 minutes to soften slightly.
  4. In a large skillet, heat olive oil over medium heat. Add diced onion, garlic powder, chili powder, salt, and pepper. Sauté until the onion is soft and fragrant.
  5. Add the ground beef to the skillet. Cook thoroughly, breaking up the meat as it browns.
  6. Mix in the diced tomatoes, black beans, corn, cooked brown rice, and taco seasoning. Stir well to combine. Taste and adjust seasoning with salt and pepper if necessary.
  7. Fill each pepper half generously with the ground beef mixture. Overfill slightly for a hearty portion.
  8. Cover the baking dish with foil and bake for 10 minutes.
  9. Remove the foil, sprinkle shredded cheddar jack cheese over each stuffed pepper, and return to the oven. Bake uncovered for 15 minutes or until the cheese is melted and bubbly.
  10. Serve hot, garnished with your favorite toppings like sour cream, cilantro, or a squeeze of lime.
