Directions:
- Cook the Vegetables: Heat a splash of olive oil in a large pan over medium heat. Add the onion, garlic, carrot, and celery. Cook for about 5 minutes or until the vegetables are softened.
- Brown the Meat: Increase the heat to high and add the ground beef to the pan. Cook, stirring and breaking up the meat, until it is browned and cooked through.
- Add Wine and Tomatoes: Pour in the red wine and let it simmer for a couple of minutes to reduce slightly. Then add the chopped tomatoes and basil. Season with salt and black pepper to taste.
- Simmer the Sauce: Reduce the heat to low and let the sauce simmer gently for about 1-2 hours, stirring occasionally. The longer it cooks, the more flavorful it will be.
- Cook the Pasta: Meanwhile, cook the tagliatelle pasta according to the package instructions in a large pot of salted boiling water until al dente.
- Serve: Drain the pasta and mix it with the Bolognese sauce. Serve hot, topped with grated Parmesan cheese and a sprinkle of fresh basil.
