  • 1 cup melted unsalted butter
  • 1 bunch fresh parsley, finely chopped (around 1 1/2 cups)
  • 1 beef tenderloin roast (4 to 6 pounds)
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine breadcrumbs, garlic, onion, melted butter, and parsley in a bowl to create the stuffing mixture.
  3. Slice the beef tenderloin roast lengthwise to form a pinwheel shape, unrolling the meat as you slice.
  4. Spread the stuffing mixture evenly over the unrolled roast. Roll it back up, securing it with butcher’s twine.
