Lamb Mince Filling:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, peeled and sliced
- 4 teaspoons garlic, minced
- 1 pound lamb mince (ground lamb)
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 cups lamb or beef stock
- ¾ cup sweet peas
- 1½ teaspoons dried thyme (or 1 tablespoon fresh)
- 1 teaspoon dried rosemary (or 1 tablespoon fresh)
- 1 teaspoon coarse salt
- ½ teaspoon ground black pepper
Mashed Potato Topping:
- 1 pound Yukon Gold potatoes, peeled and cubed
- ½ cup butter
- ½ cup heavy cream
- 1 teaspoon coarse salt
- ½ teaspoon ground black pepper
- ½ teaspoon garlic powder
Directions:
Prepare the Filling:
- Preheat oven to 400°F (200°C). Grease a 1½-quart casserole dish.
- In a large skillet, heat olive oil over medium-high heat. Add onions and carrots, sautéing until tender.
- Add garlic and cook for another 2 minutes.
- Stir in lamb mince and cook until browned, stirring occasionally.
- Add tomato paste and cook for 3-4 minutes.
- Mix in peas, stock, Worcestershire sauce, thyme, rosemary, salt, and pepper. Stir well and let simmer for 10 minutes until the liquid reduces and thickens.
- Transfer the mixture to the greased casserole dish.
