- 4 chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup spinach, chopped
- 4 ounces cream cheese, softened
- 1/4 cup grated mozzarella cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon red pepper flakes (optional)
Directions:
- Preheat oven to 375°F (190°C).
- Butterfly the chicken breasts and season both sides with salt and pepper.
- In a bowl, mix together the spinach, cream cheese, mozzarella cheese, garlic powder, onion powder, and red pepper flakes.
- Divide the spinach and cheese mixture among the chicken breasts, placing it on one half of each breast. Fold the other half over the filling and secure with toothpicks.
