Ingredients:

  • 4-5 potatoes, sliced
  • Salt, to taste
  • Black pepper, to taste
  • Paprika, to taste
  • Dried garlic, to taste
  • Olive oil
  • 4 eggs
  • 200 g sour cream
  • Chives, chopped
  • Cherry tomatoes, halved
  • Jägerwurst (or sausage of your choice), sliced
  • 100 g cheese, grated
  • Parsley, chopped

Directions:

  1. Preheat your oven to 200°C (392°F).
  2. Place the sliced potatoes in a baking dish. Season with salt, black pepper, paprika, and dried garlic. Drizzle with olive oil and toss to coat evenly.
  3. Bake in the preheated oven for 20 minutes, or until the potatoes are tender and slightly golden.
  4. In a bowl, whisk together the eggs and sour cream. Season with salt and add chopped chives.
  5. Remove the potatoes from the oven and reduce the temperature to 180°C (356°F).
  6. Pour the egg and sour cream mixture over the potatoes. Scatter the cherry tomatoes and slices of Jägerwurst on top. Sprinkle with grated cheese.
  7. Return the dish to the oven and bake for an additional 15-20 minutes, or until the eggs are set and the cheese is melted and bubbly.
