  • 425 gm boneless skinless tilapia fillets
  • 2 teaspoons fresh lime/lemon juice
  • 1 heaped teaspoon crushed ginger garlic green chili
  • 1/4 teaspoon salt
  • 4 to 5 tablespoons cornstarch
  • 2 tablespoons plain flour
  • 2 eggs (or 1 tablespoon baking powder and cold chilled water)

For the sauce:

  • 1 tablespoon regular soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon mushroom sauce/oyster sauce
  • 1 tablespoon sweet chili sauce (or honey with 1/8 teaspoon chili flakes)
  • 1 tablespoon hot sauce
  • 2 tablespoons tomato ketchup
  • 1 teaspoon sugar
  • 1/2 cup water
  • 1 teaspoon sesame oil

For cornstarch slurry:

  • 1 & 1/2 tablespoons cornstarch
  • 3 tablespoons water

For spice powder:

  • 1/2 inch cinnamon stick
  • 1 teaspoon fennel seeds
  • 2 to 3 small petals of star anise
  • 2 cloves (optional)

For the rest of the recipe:

  • 25 gm garlic cloves
  • 20 gm ginger
  • 1 green chili (optional)
  • 1/2 teaspoon black peppercorns
  • 450 gm bell peppers (different colors)
  • 220 gm onions
  • Freshly cracked black pepper
  • Salt as per taste
  • Oil for frying fish + 2 tablespoons oil
  • 2 green chilies (optional)
  • Chopped fresh coriander leaves/green onions for garnish

 

Directions:

  1. Marinate the fish fillets with lime/lemon juice, crushed ginger garlic green chili, salt, cornstarch, plain flour, and eggs (or baking powder and water). Set aside for 15-20 minutes.
  2. Heat oil in a pan and fry the marinated fish until golden brown. Drain and set aside.
  3. In a separate pan, heat 2 tablespoons of oil and sauté the garlic, ginger, and green chili (if using) until fragrant.
  4. Add the bell peppers and onions, and stir-fry until slightly softened.
  5. Mix the sauce ingredients in a bowl and pour it over the vegetables in the pan. Bring to a simmer.
  6. Add the fried fish to the pan and coat with the sauce.
  7. Prepare the cornstarch slurry by mixing cornstarch with water, and add it to the pan to thicken the sauce.
  8. Serve the Garlic Pepper Fish hot, garnished with freshly cracked black pepper, green chilies (if using), and chopped coriander leaves/green onions.
