- 425 gm boneless skinless tilapia fillets
- 2 teaspoons fresh lime/lemon juice
- 1 heaped teaspoon crushed ginger garlic green chili
- 1/4 teaspoon salt
- 4 to 5 tablespoons cornstarch
- 2 tablespoons plain flour
- 2 eggs (or 1 tablespoon baking powder and cold chilled water)
For the sauce:
- 1 tablespoon regular soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon mushroom sauce/oyster sauce
- 1 tablespoon sweet chili sauce (or honey with 1/8 teaspoon chili flakes)
- 1 tablespoon hot sauce
- 2 tablespoons tomato ketchup
- 1 teaspoon sugar
- 1/2 cup water
- 1 teaspoon sesame oil
For cornstarch slurry:
- 1 & 1/2 tablespoons cornstarch
- 3 tablespoons water
For spice powder:
- 1/2 inch cinnamon stick
- 1 teaspoon fennel seeds
- 2 to 3 small petals of star anise
- 2 cloves (optional)
For the rest of the recipe:
- 25 gm garlic cloves
- 20 gm ginger
- 1 green chili (optional)
- 1/2 teaspoon black peppercorns
- 450 gm bell peppers (different colors)
- 220 gm onions
- Freshly cracked black pepper
- Salt as per taste
- Oil for frying fish + 2 tablespoons oil
- 2 green chilies (optional)
- Chopped fresh coriander leaves/green onions for garnish
Directions:
- Marinate the fish fillets with lime/lemon juice, crushed ginger garlic green chili, salt, cornstarch, plain flour, and eggs (or baking powder and water). Set aside for 15-20 minutes.
- Heat oil in a pan and fry the marinated fish until golden brown. Drain and set aside.
- In a separate pan, heat 2 tablespoons of oil and sauté the garlic, ginger, and green chili (if using) until fragrant.
- Add the bell peppers and onions, and stir-fry until slightly softened.
- Mix the sauce ingredients in a bowl and pour it over the vegetables in the pan. Bring to a simmer.
- Add the fried fish to the pan and coat with the sauce.
- Prepare the cornstarch slurry by mixing cornstarch with water, and add it to the pan to thicken the sauce.
- Serve the Garlic Pepper Fish hot, garnished with freshly cracked black pepper, green chilies (if using), and chopped coriander leaves/green onions.
