Ingredients:
- 1 egg
- 2.5 cups of water (500 ml)
- 6 cups of flour (720 grams)
- 1/3 teaspoon of salt
- 200 grams of butter (for greasing the dough)
- For the filling:
- 400 grams of minced meat
- 2 onions, finely chopped
- 1 teaspoon of black pepper
- 1 teaspoon of chili powder
- Salt to taste
- A handful of parsley, chopped
- For the topping:
- 1 egg yolk
- 1 teaspoon of milk
Directions:
- In a large mixing bowl, whisk 1 egg. Add 2.5 cups of water and 1/3 teaspoon of salt, and mix well.
- Gradually add 6 cups of flour to the mixture, mixing continuously. Knead until you get a soft dough that doesn’t stick to your hands.
- Divide the dough into 4 equal parts, roll them into balls, and let them rest for 10 minutes, covered.
- Roll out each dough ball on a floured surface until large enough. Spread 50 grams of butter evenly over each.
- Layer another dough ball on top, spread butter, fold, and repeat for all. Refrigerate the folded dough for 30 minutes.
- Fry the minced meat until it absorbs its water. Add onions, and seasonings, and fry for 2-3 minutes. Add parsley, and let cool.
- Roll out the dough into a square, cut into four, place the filling, roll up, and place on a baking tray.
- Mix egg yolk and milk, brush over pastries, cut, and bake at 185°C until golden and crispy.
