- 300 grams broccoli
- 1 teaspoon baking powder
- 1 carrot, grated
- 1 cup (200 grams) oatmeal
- 2 eggs
- 1/3 teaspoon salt
- 1/3 teaspoon black pepper
- 80 grams cheese, grated
- Green onion, chopped
- Olive oil
- Tomatoes, onion, garlic, Italian seasoning, parsley
Directions:
- Preheat the oven to 180°C (350°F).
- Rinse the broccoli under cool water, trim off any tough stems, and cut into small florets. Steam or blanch the broccoli until tender, then drain and allow to cool.
- In a mixing bowl, combine the steamed broccoli with baking powder, grated carrot, oatmeal, eggs, salt, black pepper, grated cheese, and chopped green onion. Mix well.
- Grease a baking dish with olive oil and transfer the broccoli mixture into it, shaping it into a loaf.
- Bake for 20-25 minutes, or until golden brown and cooked through.
